Collection of recipes, including recipes for chicken, fish, and kid (goat) dishes; stews (estofados and guisos) and soups, including "French soup"; salads and other preparations of vegetables such as artichokes, squash, beets, sweet potatoes, and cauliflower; tortillas and arepas; empanadas, quesadillas, and tamales; fritters, cakes (biscochos and pasteles) and other sweets. Ingredients include chiles, adobo, oregano, almonds, avocados, rice, dates, lemons, coconut, and chocolate. The second half of the book, which follows a second 1820 title page (p. 121), is on different, slightly larger paper, and may be later than the first half.
